White Chocolate Mousse

This recipe is my husband's all time favourite dessert, he just adores it! I must admit I quite like it too though!

INGREDIENTS

100ml/3.5fl oz full fat milk

250g/9oz white chocolate

300ml/1/2pint double cream

3 egg whites

cocoa powder to decorate

METHOD

Put the milk in a pan and gently warm until almost boiling.

Remove pan from heat.

Melt the chocolate in a bowl over a pan of simmering water.

Strain the milk onto the chocolate and stir until smooth then leave to cool.

Whip the cream until it starts to thicken.

Whisk the egg whites until they form soft peaks.

Fold the cream into the chocolate mixture using a metal spoon, then carefully fold in the egg white.

Divide the mixture equally into individual bowls and chill for at least 4 hours.

Dust with cocoa powder before serving.
