Peanut Butter BarsIf you love Reese’s Peanut Butter Cups, you will love these peanut butter bars. They are so simple to make!

Ingredients:- 2 cups peanut butter (creamy or crunchy)
- 1 tsp. vanilla
- 1 stick of butter
- 1 lb. confectioners sugar
- 3/4 cup brown sugar (packed)
Combine all the above ingredients together in a bowl. Then, use your hands to get the ingredients thoroughly mixed together. Scoop the peanut butter mixture out of the bowl and put it in a pan. I used a 7 x 11 x 2 inch glass pan. Pack it down tightly and evenly in the pan, again using your hands. Set this aside while you prepare the topping.
Ingredients:
- 12 oz. bag of semi-sweet chocolate chips
- 1 stick of butter
Melt the chocolate chips and butter together. You can either accomplish this by using a double boiler or melting them in the microwave. Both methods work. After you have done this, stir until smooth.
Spread this chocolate mixture evenly over the top of the peanut butter mixture. Let it cool until the chocolate topping gets firm and then cut into squares.
Peanut Butter Balls- 2 pounds powdered sugar
- 2 sticks melted butter
- 1 quart peanut butter
Mix ingredients well and roll into balls. Dip in Candy quick (you can find this in any store cake decorating section). Put on wax paper to cool.
The next two sweet snack recipes, the oreo truffles and saltine bark, are from my daughter-in-law, Amy.
Oreo Truffles
- 1 package Oreo cookies
- 1-8 oz. package cream cheese
- 1-12 oz. bag of milk chocolate chips
Put Oreo cookies into food processor and process until you have fine crumbs. Remove a little of the crumbs from the food processor to put on the truffles after they have been dipped in chocolate.
Add softened cream cheese and process until combined. Take a teaspoonful of the Oreo mixture and roll it into a ball. Place on a cookie sheet lined with wax paper. Repeat with the remaining Oreo mixture.
Place in refrigerator or freezer until firm. Melt chocolate chips and dip truffles into melted chocolate. Place the truffles back onto a wax paper lined cookie sheet, garnish with the crumbs that you removed from the food processor and put in refrigerator or freezer until set. Store them in a ziplock bag in the refrigerator or freezer.
This is my husband's most favorite sweet snack recipe in this group of recipes.
Saltine Bark

Bake for 12-15 minutes. Remove from oven. Cool for about 5 minutes.
Sprinkle chocolate chips on top. After they have melted, spread evenly. Cool completely in refrigerator. When cooled, break into pieces and store in the refrigerator.
