American Sweet Muffins

Sweet Muffins

What is the American sweet muffin? It is a type of quick bread. That means they are yeast free. They are baked in small segments, like a cupcake or small cake. They are often served for breakfast and there are many varieties such as chocolate, chocolate chip, strawberry, boysenberry, almond, oatmeal, carrot just to name a few. Muffins are also great as a mid-morning snack or anything you want a snack.

Not all muffins are sweet, such as cornbread muffins. We enjoy our cornbread muffins with butter and jam. Here are some great muffin recipes.












Oatmeal Sweet Muffins

Ingredients

  • 1 cup scalded milk*
  • 2 tbsp. butter
  • 3/4 cup uncooked oatmeal
  • 3 tbsp. sugar
  • 1/2 tsp. salt
  • 1 egg, beaten
  • 1 1/2 cups flour
  • 4 tsp. baking powder
What is scalded milk?

Preheat you oven to 400 degrees F. Grease you muffin pans and set aside.

Melt the butter in the scalded milk. In a bowl, pour the hot milk and butter mixture over the oatmeal. Stir and let it stand for three minutes. Then, add the sugar, salt and beaten egg. Sift the flour and baking powder together and then mix in just enough to moisten. Pour into the muffin pans and bake for 20 to 25 minutes.












Carrot Raisin Muffins

Ingredients

  • 1 cup shredded carrots
  • 1/2 cup chopped walnuts
  • 1/2 cup raisins
  • 1/2 cup sugar
  • 3/4 melted butter
  • 2 eggs, slightly beaten
  • 1 1/2 cups all purpose flour
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
What to do

Preheat you oven to 400 degrees F. Grease your muffin pans and set aside.

In a bowl, combine the carrots, walnuts and raisins and set aside. Then in a separate bowl, beat the sugar with the melted butter until it is light and fluffy. Add the eggs and blend in well. Stir until just blended in the flour, baking powder, baking soda and salt. Do not over-mix. Fold in the carrot mixture. Fill you muffin pans. Put them in the oven and bake for 20 minutes or until the muffins are brown.












Raisin Bran Sweet Muffins

Ingredients

  • 1 cup sifted flour
  • 3 tsp. baking powder
  • 1/2 tsp. salt
  • 2 tbsp. sugar
  • 1 egg, well beaten
  • 2/3 cup milk
  • 1/4 cup butter, melted
  • 1 1/2 cups raisin bran cereal
What to do

Preheat your oven to 425 degrees F. Grease your muffins pans and set aside. This recipe makes 1 dozen medium size muffins.

Sift the flour, then add the baking powder, salt and sugar and sift again. Combine the beaten egg with the milk. Add the egg mixture to the flour mixture and mix just until the ingredients are blended. Carefully, stir in the cereal. Then, fill the muffin pans 2/3 full and bake for 20 minutes or until done.

Scalded Milk

To scald milk, pour it in a heavy pan and bring it almost to a boil or heat to 180 degrees F (82 degrees C). Make sure you do not take your eye off the pan because you do not want to scorch or burn the milk.

I have read that the reason for putting scalded milk in a bread recipe is it will make the loaf tender.
