Pennsylvania Dutch Shoofly Pie

Here are two shoofly pie recipes to enjoy!

Shoofly #1

  • 1/4 cup margarine
  • 1 1/2 cup flour
  • 1 cup brown sugar
  • 3 cups sorgham molasses
  • 1 egg
  • 3/4 cup hot water
  • 3/4 tsp. baking soda
  • 1 pie shell
Work shortening, flour and brown sugar into a mixture of crumbs. Beat egg in bowl and add molasses. Mix soda and water and add to molasses mixture. Pour liquid into unbaked pie shell. Add crumb mixture on top.

Bake for 15 minutes at 400 degrees. Reduce heat to 350 degrees and bake about 30 minutes more.












Shoofly #2 (Cake type)

  • 1 cup dark molasses
  • 1 cup water
  • 1 tsp. baking soda
  • 3 1/2 cups flour
  • 1 1/4 cups sugar
  • 1/2 tsp. salt
  • 1 1/4 cups butter
Combine thoroughly molasses, water and soda. Sift together flour, sugar and salt. Cut in butter until the mixture is crumbly. Sprinkle a little of the flour mixture over the bottom of two deep greased pie pans and reserve 3/4 cup for the topping.

Gradually add the remaining flour mixture to the molasses mixture to the molasses mixture, stirring lightly, and pour the dough into the prepared pie pans. Sprinkle the reserved flour mixture over the top.

Bake the pies in a very hot oven (400 degrees) for about 25 minutes or until they are firm and crusty.
