Rocky Road Sheet Cake

This sheet cake is a very light and airy cake. The frosting, however, is very thick and rich with cocoa and marshmallow. It is just delicious!


Cake Recipe

sifting ingredients

First, sift the following ingredients together and set them aside.

  • 2 cups cake flour
  • 1/4 tsp. salt
  • 1 3/4 cups sugar
  • 4 tbsp. cocoa



Next in a sauce pan, bring the following to a boil. Then pour over the dry ingredients and beat until creamy.
  • 1 cup cold water
  • 1/2 vegetable cup oil
  • 1/2 cup margarine or butter

Now add the following and beat well.

  • 1/2 cup buttermilk
  • 1 tsp. soda
  • 1 tsp. vanilla
  • 2 eggs

Pour into a well greased and floured 9 x 13 inch cake pan. The mixture will be thinner than regular cake mixture. Bake at 400 degrees for 20-25 minutes. Test cake after 20 minutes. May be frosted while still warm.

Frosting Recipe

Bring the following to a boil in a saucepan.

Add 1 box powdered sugar and 1/2 tsp. vanilla. Mix well with a spoon. Do not beat. If you wish, add 1/2 cup chopped nuts - stir well and put on cake. We did not put nuts in the frosting shown here.
