Here we have a seven minute frosting or icing which is also known as boiled icing. The seafoam frosting is also a boiled icing. Seven Minute Icing 2 unbeaten egg whites 1 1/2 cup white sugar 1 1/2 tsp. light corn syrup dash salt 5 tbsp. water 1 tsp. vanilla Combine egg whites, salt, sugar, water and corn syrup in top of a double boiler. Mix well. Place over rapidly boiling water. Beat constantly with electric mixer and cook for 7 minutes or until frosting stands in stiff peaks. Remove from water. Add vanilla. Beat until stiff. Seafoam Frosting 2 egg whites 1 1/2 cups brown sugar 1/3 cup water 1 tsp. vanilla Stir egg whites, sugar and water in top of double boiler until smooth. Cook over boiling water. Beat for 4 to 7 minutes or until fluffy and holds gentle shape. Remove from water and add vanilla. Beat until it forms firm or stiff peaks.
