This strawberry schaum torte is a dessert that consists of 12 baked meringues that are filled with strawberries and topped with whipped cream.
Preheat your oven to 275 degrees F.
You will need:
- 6 egg whites at room temperature
- 2 cups sugar
- 1 tsp. vanilla
- 1 tsp. vinegar
You will also need:
- vanilla ice cream
- whipped cream
- strawberries
or
- lemon pudding
- whipped cream
- fresh strawberries
Beat the whites until stiff enough to peak. Beat in the sugar, 2 tbsp. at a time, taking about 15 minutes to finish. After half of the sugar is used, add vanilla and vinegar. Mound on a cookie sheet covered with waxed paper.
This recipe will make 12 tortes about 3 inches high. They should be stiff enough to stand without spreading.
Bake at 275 degrees F. for 1 hour. Then, remove them from the oven and immeidately take off the waxed paper with a spatula and pack in tins. They will keep for one day out of the refrigerator.
To serve, gently break off the top third of each torte with a fork. This makes a "hat". Fill with vanilla ice cream or lemon pudding, whipped cream and fresh sliced strawberries and then replace the top.
The strawberries are better crushed, with sugar added. Save a few whole ones for garnish.
