Quick Breads
What are quick breads? They are hot corn bread fresh out of the oven, drippings with butter.
They are a coffee cake crunchy with nuts or luscious with a baked-on fruit topping.
They are a blueberry or banana muffin so tender that it crumbles in your fingers and melts in your mouth.
These breads are leavened with baking powder, soda, steam or air, rather than yeast.
Also because of the similar type of batter that is used in making pancakes, waffles, fritters and doughnuts, these are also counted in this category even though they are not breads at all.
It is quite surprising that even dumplings steamed in broth or syrup belong to this family.
The secret in making all these breads is to not overmix! Stir the batter for muffins or pancakes just until the flour is well dampened. Overbeating or overmixing may cause toughness, uneven texture and a less attractive appearance.
It is best to serve biscuits, muffins and coffee cakes while piping hot!
