This pumpkin pie bars recipe is great to make for the family during the holidays.
Ingredients:
- 1 package yellow cake mix
- 1/2 cup melted margarine
- 1 egg
- 1 can pumpkin pie mix*
- 2 eggs
- 2/3 cup milk
- 1/4 cup sugar
- 1/4 cup melted margarine
- 1 tsp. cinnamon
In a bowl, put the cake mix except for 1 cup (reserve for later), also the melted 1/2 cup margarine and 1 egg. Mix well.
Grease the bottom of a 9 x 13 inch pan and firmly press this crust mixture into it.
Now combine the pumpkin pie mix, 2 eggs and 2/3 cup milk. Mix together.
Pour the pumpkin filling over the cake crust.
Next mix 1 cup reserved cake mix, 1/4 cup sugar, 1/4 cup melted margarine and 1 teaspoon cinnamon.
Blend together.
Keep blending.
Sprinkle topping on pumpkin mixture.
Bake at 350 degrees for 45 to 50 minutes.
This is especially good for the holidays with whipped cream on top.
