Pecan Pie Cake

Pecan Pie Cake This pecan pie cake is fabulous!!!

It is a great cake for the holidays and so simple to make! If you are a fan of pecan pie, you will just love this cake. It is so rich and leaves you wanting more.

If you are wondering what the dark spot is in this pecan pie cake, it is a piece brown sugar. I don't know why but I guess I didn't mix it in all the way and it floated to the top.


All you do is:

Preheat your oven to 325 degrees F. Then, generously grease a 9 x 13-inch glass baking dish. Make sure you cover both the bottom and sides and set it aside.

TIP: It is important that you grease your dish well. If you don’t, it will stick to the dish.

The ingredients you will need are:

  • 1 box yellow cake mix
  • 1 cup brown sugar
  • 2 sticks butter
  • 4 eggs
  • 2 tbsp. water
  • 2 cups chopped pecans
  • 1 cup granulated sugar
  • 1 cup light corn syrup
  • 1 cup milk
  • 1 tbsp vanilla
There are two layers to this cake.

For the bottom layer combine the following ingredients: 1/3 of the cake mix; 1 cup of brown sugar; 1 stick of melted butter; 2 eggs; 2 tbsp water; and the 2 cups of chopped pecans. Mix these ingredients together well.

Pour this mixture into your baking dish and spread it out to completely cover the bottom of the dish. Bake this layer for 20 minutes in a 325 degree F oven.

For your top layer mix together 1 cup of granulated sugar; 1 cup light corn syrup; 2 eggs; 1 stick of melted butter; the other 2/3s of the cake mix; 1 cup milk; and 1 tbsp. vanilla. Mix until well blended.

After you have removed the baked bottom layer from your oven, pour the top layer over it, smooth out and return to oven. Continue baking for 35 minutes.

This cake is better when it sits out at room temperature for 6-8 hours before eating. However, if you can’t wait that long, just make sure to cool it completely before cutting. Yield: 20 servings.
