Coconut Pecan Bars

Try these old-fashioned coconut pecan bars. They do not take long at all to make

Ingredients:

  • 1 cup dark brown sugar
  • 1 cup shortening
  • 2 cups plus 2 tbsp. flour
  • 2 beaten eggs
  • 1 cup light brown sugar
  • 1/2 cup coconut
  • Dash of salt
  • 1 tsp. vanilla
  • 1/2 cup pecans
Method:

Mix dark brown sugar, shortening and 2 cups flour together. Pat into bottom of 8x8x2 inch cake pan. Bake at 350 degrees for a few minutes. Beat eggs. Add light brown sugar. Beat until well mixed. Add coconut tossed with the remaining flour and salt. Add vanilla and pecans.

Pour over top of the baked mixture. Bake 20 minutes more or until golden brown. Cool. Cut in small squares. Sprinkle a small amount of powdered sugar over top, if desired.
