Our Peanut Butter Pie Recipe - Yum Yum!
- 1 baked pie shell
- 3/4 cup powdered sugar
- 1/3 cup crunchy peanut butter
- 2/3 cup granulated sugar
- 3 tbsp. cornstarch
- 1 tbsp. flour
- 1/2 tsp. salt
- 3 eggs, separated
- 3 cups milk
- 1 tsp. vanilla
- 6 tbsp. granulated sugar for meringue
2 tbsp. butter
Mix powdered sugar and peanut butter together and then sprinkle 3/4 of this mixture on the bottom of a baked pie shell. Over medium heat, combine butter, 2/3 cup sugar, cornstarch, flour, salt and the milk. Heat until slightly thickened. Beat egg yolks and to them add a little of the pudding mixture. Then return it all to the pan and heat until thickened. Remove from heat and add vanilla. Pour into pie shell.
Beat egg whites until stiff, while adding the 6 tbsp. of sugar gradually. Spread meringue over pie. Sprinkle with remaining peanut butter/sugar mixture and brown in a 350 degree oven just until slightly browned.
