Fudge Layered Oatmeal Bars

These oatmeal bars are just plain good. You have the oatmeal cookie layer, then the fudge layer and it is topped off with crumbles of the oatmeal cookie.

Oatmeal Layers:

  • 1/2 cup buter
  • 1 cup brown sugar
  • 1 egg
  • 1 tsp. vanilla
  • 1 1/4 cup flour
  • 1/2 tsp. soda
  • 1/2 tsp. salt
  • 1 1/2 cup rolled oats
  • 1/4 cup chopped walnuts
Cream together the first 4 ingredients. Stir in flour, soda and salt. Blend in the oats and walnuts. Reserve two-thirds cup mixture for topping. Press remaining mixture in gresed 9x9 or 11x7 inch pan.

Fudge Layer

  • 1 cup chocolate chips
  • 1 tbsp. butter
  • 1/2 cup condensed milk
  • 1/4 tsp. salt
  • 1/2 cup chopped walnuts
  • 1 tsp. vanilla
Combine first 4 ingredients in saucepan. Place over low heat, stirring until chocolate is melted. Remove from heat. Add nuts and vanilla. Press mixture over oatmeal layer. Crumble remaining oatmeal mixture over fudge layer. Bake at 350 degrees for 25 to 30 minutes until lightly browned. Cool. Cut into bars. Yield: 12 bars.
