I made microwave fudge for the first time this week. Here is the recipe I used:
Microwave Fudge with Marshmallows
Ingredients:
- 1 box confectioners sugar
- 1/2 cup butter
- 1/4 cup, plus 1 tbsp. milk
- 1 tbsp. vanilla
- 1/2 cup baking cocoa
- 1 cup miniature marshmallows
- 1/2 cup chopped nuts (optional)
What to do:
Mix all the ingredients in a 3-quart mixing bowl except for the vanilla. Place the bowl in the microwave and cook on high for 2 minutes. As soon as you take the bowl out of the microwave, add the vanilla and stir the mixture until it is well blended.
Pour into a well buttered 8-inch baking dish. Cover the baking dish and put it in the refrigerator until set. Overnight is best. Cut into 1-inch squares.

I have to admit, it is not as good as the old fashion fudge like my mother’s homemade fudge I make on top of the stove. However, the taste was good.
The consistency was not smooth. It may be because when I made it the old fashion way, I beat it until the shine went away and the fudge got thick. Then I tested the fudge until it got to the soft-ball stage
With the microwave version, it called for stirring ONLY until the mixture was well blended.
So, I am going to try it again. However, this time I am going to use another recipe without the marshmallows and stir it until the shine goes away and if I need to, check to see if it is at the soft ball stage. I am also going to change my recipe and use the one below.
Microwave Fudge without Marshmallows
Ingredients:
- 1 stick butter
- 1/3 cup cocoa
- 1 tbsp. vanilla
- 1 cup confectioners sugar
- 1/4 cup milk
- 1/2 cup nuts (optional)
Put the butter, sugar, cocoa and milk in a bowl and stir. Microwave it on high for 2 minutes. As soon as it comes out of the microwave, add the vanilla. Then beat the mixture until smooth. Add the nuts. Pour onto a buttered plate or pan and refrigerate for approximately 1 hour.
NOTE: I am going to beat this mixture until the shine is gone and then spread it out on a buttered dish. I will let you know what are my results.
