Meringue Recipe Ingredients
- 3 egg whites
- 1/4 tsp. cream of tartar
- 6 tbsp. sugar
- 1/2 tsp. vanilla
Method
- Beat egg whites with cream of tartar until frothy. Gradually beat in sugar, a little at a time.
- Continue beating until stiff and glossy. Do not under beat. Beat until sugar is dissolved. Check this by getting some between your index finger and thumb and feeling it. Beat in flavoring.
- Pile meringue onto hot pie filling. Make sure to bring the meringue all the way to touch the sides of pie crust to prevent shrinking or weeping.
- Swirl up into peeks for decorative top. Bake until browned at 400 degrees for 8 to 10 minutes.
- To cut meringue pie neatly. Dip a sharp knife into water and repeat between cuttings.
