Macadamia Nut Cookies

I just love macadamia nuts and this recipe for Macadamia Nut Cookies is so good yet simple to make. It is similar to the Mexican Wedding Cookies/Cakes.

Ingredients:

  • 1 cup butter
  • 1/2 cup granulated sugar
  • 1 tsp. vanilla
  • 2 1/4 cups sifted flour
  • 1/4 tsp. salt
  • 1 cup macadamia nuts, chopped fine
  • confectioners sugar
Preheat your oven to 350 degrees F. In a large bowl with an electric mixer at medium speed, cream butter until it is fluffy. Gradually beat in the sugar and vanilla. Sift the flour with the salt and stir into the butter mixture. Stir in the nuts until well distributed.

Shape into 1-inch balls and place on an ungreased cookie sheet. Bake for 12 minutes or until the cookies just start to brown. (They should stay light in color.) Let the balls cool for a few minutes on the cookie sheet and then, while they are still warm, roll them in confections sugar. This recipe makes 3 1/2 dozen.
