Mix all ingredients together for two minutes with your mixer on medium speed.
Pour into a well greased cake pan using shortening and flour.
Bake at 325 degrees for 1 hour. (Remember every oven is different so start checking your cake at least 15 minutes earlier than the recipe says.) Let set 5 minutes and then put on a plate.
In the below two pictures, it shows the cake being flipped onto a wire rack. I did this before thinking about it. It usually flip it directly onto a plate rather than a rack.
Here is the cake after being flipped. Let it cool a bit before putting on the glaze.
The Lemon Glaze
For the glaze, all you need is the juice of 1 lemon and 1 cup confectioner sugar.
My Sweetie's Tip: I always swift my powdered sugar before mixing because that way it is a lot easlier to mix with whatever liquid you are using.

If you are adding fruit to your cake, let your cake cool completely before placing the fruit.
