This pecan cream cheese coffee cake has it all. It has a great tasting crust and a gooey sweet top with those luscious pecans in the middle. As a bonus, it is simple to make.
Ingredients:
- 1 yellow cake mix
- 4 eggs
- 1 1/2 sticks butter, melted
- 1 cup chopped pecans
- 1 (8 oz.) package cream cheese
- 1 ½ tsp. vanilla
- 1 (16 oz.) box confectioners sugar
Pre-heat your oven to 300 degrees F. I used a 9 x 13 inch glass dish to bake this coffee cake.
First, whisk 2 eggs. Then, mix them together with the cake mix and melted butter. The mixture will be very thick. I used a spatula to transfer it from the bowl to the glass dish. Then used the spatula to spread and pat down the batter. It will become the bottom crust. Sprinkle the pecans over top.
Next, in a separate bowl, whisk the other 2 eggs. Add the cream cheese, vanilla and all but a couple of tablespoons of the confectioners sugar. Mix those ingredients together well.
Pour the cream cheese mixture over the top of the pecans. Spread it out completely.
Put the cream cheese coffee cake in the oven and bake for about 15 to 20 minutes. Take out and dust with the rest of the confectioners sugar all over the top. I use a flour swifter when I am dusting with confectioners sugar. It just looks more finished.
Put your cream cheese coffee cake back in the oven and bake for an additional 25 to 30 minutes or until the center has set.
Here are a few Baking Tips:
- When a recipe calls for butter, margarine or shortening, do not substitute a spread. This is because spreads contain less fat and more water. So you product will not turn out the same.
- Make sure you use the right measuring cups when you are measuring out liquid and dry ingredients. The cups that measure dry ingredients are not the same as for measuring liquid ingredients.
- Always use measuring spoons, not the spoons you use at the table to eat, to measure small amounts. Also, be sure to level the spoons with a spatula or a knife. It is important to add the exact amount that is in your recipe.
- When measuring dry ingredients, dip the spoon into the container until it is more than full, then level it off.
- When measuring liquid ingredients, you want the liquid to reach just to the top edge of the spoon. Do not measure over top of your mixing bowl.
