Your children will love helping you in the kitchen when you make these chocolate marshmallow cookies.
Cookies
- 1 3/4 cups sifted cake flour
- 1/2 tsp. soda
- 1/2 tsp. salt
- 1/2 cup cocoa
- 1/2 cup shortening
- 1 cup sugar
- 1 egg
- 1/2 cup milk
- 1/2 cup chopped pecans
- 1 tsp. vanilla
- 36 marshmallows, cut in half
- pecan halves
Sift the flour. Measure and sift again with the soda, salt and cocoa. Cream the shortening. Add the sugar gradually, blending thoroughly. Add the egg and beat well. Add the flour mixture and milk alternately, beating after each addition. Add the chopped nuts and vanilla and mix well.
Drop by level tsp. about 2 inches apart onto a well greased cookie sheet. This is because the cookies will spread.
Bake at 350 degree F. for 8 minutes. Top with a marshmallow half, cut side down. Return to the oven and bake for 2 more minutes or until the marshmallow softens.
Cool and then frost with cocoa frosting (the recipe is below). Top each cookie with a pecan half.
Frosting
Sift 2 cups of powdered sugar with 5 tbsp. cocoa and a dash of salt. Add 3 tbsp. melted butter, 4 tbsp. light cream and ½ tsp. vanilla. Beat until smooth and creamy. Then, spread on the cookie.
