Chocolate Cherry Cake Which is Fabulous!
This chocolate cherry cake is moist and delicious! It will satisfy anyone's chocolate craving.
SWEETIE'S CHANGES: Instead of using solid shortening to grease the pan. I used Crisco spray with flour for baking.
I did use a large bowl to combine my ingredients. I stirred them by hand which the recipe calls for. This is because if I would have used an electricmixer, I would have pulverized the cherries. So, carefully stir with a spoon making sure you get all the ingredients mixed thoroughly.
My oven took 30 minutes to bake the cake. However, I did start checking for doneness after 20 minutes. I did not want the cake to overcook and become dry.
Remember every oven is different. This is why I started checking after 20 minutes. When the cake wasn't finished, I checked it at 5 minute intervals.
As for the frosting, I kind of goofed on that the first time I made it. However, it came out just as it should.
My husband went to the store to get the semi-sweet chocolate bits. Now, there are all kinds of chocolate bits to choose. So, he brought home the semi-sweet chocolate bits I requested. Also, he brought home milk chocolate toffee bits. We decided to try the toffee bits instead of the semi-sweet chocolate bits.
This is where I kind of goofed. Instead of just putting the sugar, butter and milk in a saucepan and bring it to a boil, I threw in the milk chocolate toffee bits along with those ingredients. Then, I tried to retrieve the toffee bits from the sugar mixture. This was because the toffee bits were very sweet and I figured the frosting would also be terribly sweet if I used them. Also, like the recipe reads below, I was suppose to put the chocolate bits in after the first three ingredients boiled for one minute.
Well, I dug the chocolate bits out of the sugar I had already put in the pan. I couldn't get all of them out so, I left a little bit in the pan. Then, I used the semi-sweet chocolate bits, which I was suppose to use.
Needless-to-say, it came out perfect.
I suggest that everyone should make this one. My husband and I both agree that this chocolate cherry cake is moist and delicious alone. But, that fudge frosting was to die for!!
Here is the recipe: Chocolate Cherry Cake
- 1 package fudge cake mix
- 21 oz. can cherry fruit filling
- 2 eggs, beaten
- 1 tsp. almond extract
Using solid shortening, grease 13 x 9 inch pan. In a large bowl, combine ingredients. By hand, stir until well mixed. Pour into pan. Bake 25 to 30 minutes at 350 degrees.
Chocolate Fudge Frosting
- 1 cup sugar
- 5 tbsp. butter or margarine
- 6 oz. pkg. semi-sweet chocolate bits
- 1/3 cup milk
In a small saucepan combine sugar, butter and milk. Boil one minute, stirring constantly. Remove from heat. Stir in chocolate pieces until smooth. Drizzle over cake.
This is the greatest frosting. It is fudge on top of this great chocolate cake. Fabulous!
