Carrot Cake with Carmel Icing or Cream Cheese Icing
Golden Carrot Cake
2 cups grated carrots
1 1/2 cups vegetable oil
1/2 cup chopped nuts
3 tsp. baking soda
2 tsp cinnamon
2 cups sugar
4 eggs
3 cups flour
3 tsp. baking soda
1/2 tsp salt
Stir together carrots, sugar, oil, eggs and nuts. Sift res t of ingredients and mix into carrot mixture. Bake in ungreased
pan (tube) at 350 degrees for about 1 1/2 hours.
Carmel Icing
2 cups brown sugar
2 sticks margarine
1/2 cup milk
4 cups confectioners sugar
2 tsp vanilla
Blend brown sugar and margarine over medium heat and bring to a boil. Add milk. Boil for five minutes. Cool. Add confectioners sugar. Add vanilla.
