Carrot Cake with Carmel Icing or Cream Cheese Icing

Golden Carrot Cake

  • 2 cups grated carrots
  • 1 1/2 cups vegetable oil
  • 1/2 cup chopped nuts
  • 3 tsp. baking soda
  • 2 tsp cinnamon
  • 2 cups sugar
  • 4 eggs
  • 3 cups flour
  • 3 tsp. baking soda
  • 1/2 tsp salt
Stir together carrots, sugar, oil, eggs and nuts. Sift res t of ingredients and mix into carrot mixture. Bake in ungreased pan (tube) at 350 degrees for about 1 1/2 hours.

Carmel Icing

  • 2 cups brown sugar
  • 2 sticks margarine
  • 1/2 cup milk
  • 4 cups confectioners sugar
  • 2 tsp vanilla
Blend brown sugar and margarine over medium heat and bring to a boil. Add milk. Boil for five minutes. Cool. Add confectioners sugar. Add vanilla.






The following recipe has been in my family for many years.

Cake

Mix sugar, eggs and oil. Beat well. Sift flour and dry ingredients. Add to egg mixture. Add carrots and nuts. Bake at 300 degrees for 45 to 60 minutes.

Cream Cheese Icing

  • 1 - 8 oz. pkg. cream cheese
  • 3 cups confectioners sugar,/li>
  • 1/2 stick butter
  • 1 tsp. vanilla
Cream together and spread.
