Candy Making Tools

Except for a candy-thermometer, most candy making tools needed to make candy, which includes fudge, can be found in a well-stocked kitchen. These are those additional tools you need to have in your kitchen to make candy:

  • A heavy bottom, medium-sized saucepan with straight sides is a must. The pan should be large enough to hold 3 to 4 times the ingredients you are putting into it. This will help prevent your candy from boiling over and out of the pan.
  • A large bowl. One big enough to hold the saucepan. It allows you to cool the candy while it is still in the pan. The temperature of the sugar mixture will continue to rise even after it has been removed from the heat. So immerse the pan in cold water or in an ice water bath to stop the cooking at just the right time.
  • A long-handled wooden spoon is always a must; and
  • A pastry brush for candy-making. Some recipes will call for brushing down the sides of the pan with water to prevent crystallization.
