Jam Cake with Sugar Sauce Icing
- 3 cups all-purpose flour
- 1 tsp. soda
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 2/3 cups shortening or butter
- 1 1/2 cups sugar
- 4 eggs
- 1 cup buttermilk
- 1 cup blackberry jam
Pre-heat your oven to 375 degrees. Line three 8-inch layer pan bottoms with waxed paper. Sift togehter flour, soda, cinnamon and salt. In a large mixing bowl, cream shortening and sugar until creamy and smooth. Add eggs and beat well.
Add sifted dry ingredients alternately with buttermilk to creamed mixture. Stir in jam. Pour into greased pans. Bake in 375 degree oven for 25 to 30 minutes or until done. Cool on rack 10 to 15 minutes. Remove from pan and remove paper.
Place on large cake plate and cover with sugar sauce icing.
Sugar Sauce Icing
- 1/2 cup sugar
- 1 1/2 cup sweet milk
- 1 egg
Boil the sugar and milk together in saucepan until it becomes thick and will coat a spoon. Remove from the heat. Add beaten egg and stir until cool. Put generously between the layers, allowing time for them to absorb the sugar sauce icing.
Ann's Blackberry Jam Cake with Coconut Icing
- 1 cup butter
- 2 cups sugar
- 3 eggs
- 1 cup buttermilk
- 3 cups flour
- 1 tsp. soda
- 1 tsp. baking powder
- 1 cup blackberry jam
- 1 cup raisins
- 1 cup coconut
- 1 cup nuts
- 1/4 tsp. salt
Cream butter, sugar and eggs. Then alternate milk and flour (sift flour, soda and baking powder together) and add remaining ingredients. Bake at 350 degrees.
Coconut Icing
2 cups sugar, sifted with 4 level tbsp. flour, 1 cup butter, 1 cup cream, 1 1/2 cups coconut (cook until it bubbles like jelly).
Granny's Jam Cake
- 4 eggs, separated
- 1 tsp. soda
- 1 cup white sugar
- 1 cup brown sugar
- 1 cup butter
- 1 tsp. cinnamon
- 1 tsp. cloves
- 1 tsp. allspice
- 1 tsp. nutmeg
- 1 tsp. cocoa
- 1 cup blackberry jam
- 1 cup raisins
- 3 cups flour
- 1 cup buttermilk
Beat eggs yolks. Then put in soda, sugars and butter. Add cinnamon, cloves, allspice, nutmeg and cocoa. Beat egg whites and add jam and raisins. Add flour and buttermilk alternately. Preheat oven to 350 degrees. Bake in pan until done.
