Apple Cake with Coconut Icing
- 1 1/2 cup oil
- 2 cups sugar
- 3 eggs
- 3 cups flour
- 1 tsp. soda
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 3 cups sliced apples
- 1 cup nuts
Mix all ingredients together and cook at 350 degrees for 40 minutes.
Icing
- 1 cup light brown sugar
- 3 tbsps. pet milk
- 1 stick margarine
- 1 cup coconut
- 1 cup nuts
Let sugar, milk and margarine boil. Add coconut and nuts. Pour over cake.
Chopped Apple Cake
- 1 cup oil
- 2 cups sugar
- 3 cups flour
- 2 eggs
- 3 cups chopped apples
- 1 cup pecans
- 1 tsp. soda
- 2 tsp. vanilla
Mix all together and bake at 350 degrees in loaf pan.
